Consistency:
I have found that following the guidelines you set out in a parent hand book consistently usually works out best for the overall well being of all the children. You may already be making menu adjustments for some children and requiring parents to provide any special dietary needs. Usually explaining to parents that even though no children in their child's classroom has allergies the same can't be said for any siblings or staff. I noticed that the parents asked other families about allergies but did NOT ask any of the staff that may come into contact with the food. I have also asked parents to consider how they would feel if I allowed another parent to bring in nut products against our rules and didn't allow them to do the same.
Working out staffing needs can be tricky as I am currently learning. Maybe an option would be to have a floater cover that teacher's schedule on the Fridays she would normally work later. I think that would allow the teacher to leave early every Friday and still allow other staff their early Fridays too.
Confrontation:
I would ask the other teacher if she needs help adjusting the lesson plan to her age group. I would let her know she can look through my resource books for lesson ideas in the future and that I would be available to help her with next months plans.
I have handled the Hurt child/Angry parent scenario before. Apologizing to the parent and the child that they were hurt. Ask the parent what days and times would be good for him to meet with you and the director work out a prevention plan. Assure the parent that you do keep a close eye on all the children and talk with your entire class about behavior expectations and include role-playing scenarios.
